Okay this is where I fess up…I didn’t think that I would like raw desserts, like at all.
I know this might sound strange as I’ve kept an open mind in almost all of the other lessons in this section on raw foods but I come from a loooooong line of bakers, as in one of my first memories is standing on a stool in the kitchen up to my elbows in flour learning how to knead bread with my mother. So when Kristen talked about how hard baking was and that one of the biggest benefits of raw desserts was taking out the hassle of baking I really didn’t understand. In my world it isn’t a hassle to bake, it’s a pleasure, it’s a form of meditation, and it’s a way to show my family my love for them. But this course is about growing and throwing off the chains of sameness to discover new and wonderful ways of living…so I got busy on Pinterest to find a raw dessert I could make at home and worked to create an open mind about raw desserts.
Almost immediately I found a recipe that I thought I could handle and sounded super delish but I came upon a stumbling block-I was missing a few of the ingredients. I toyed with the idea back and forth of making a trip to the store to get those few specific ingredients, but as I live out in the country (and we’re considering moving even more remote soon) I am really trying to limit my trips to town to once a week or less to cut down on wasted time, using up gas, and spending money we don’t need to spend. I never can quite seem to just buy what I need when I go into the store but these tarts sounded sooo yummy! I looked around my kitchen and decided I had a few things that could be substituted and chose to give it a whirl…with my fingers crossed! Thankfully I was just finishing up grinding some fresh flour so that was set to go!

In total the dessert took about 10 minutes of active work on my part and then time to set up to chill in the fridge while Marshall and I went to take a walk in our backyard.

After getting over my initial reticence in making the dish I was actually very excited to see how it would turn out, especially with the substitutes I made. It was also so easy to put together and without a thousand dishes to clean up after which was a nice change from my usual mode of cooking experimentation which leads to a lot of dishes haha
So the moment of truth came…and it was time to try my first homemade raw dessert and…
I fell in LOVE!
