Wow what a name huh?! Of course the first question I get from everyone is, “But where does the protein come from?”
This is why I love living in this day and age because I can say, “Protein Powder!” and everyone knows exactly what I’m talking about and usually has a favorite of their own already and if they don’t have one in their pantry waiting it’s a simple trip to the store to fix that!
This is the first recipe that I tried from Dr. Axe’s Healing Your Leaky Gut Cookbook and I have to say I’m a big fan of beginning my mornings this way!
Okay so this is a moment of raw truth, I didn’t want to share this recipe with you all today. Not because I don’t want you to have it or to try it for yourself, but because I was embarrassed. Right now I’m eating off of paper plates and taking photos with my iPhone because I have everything else packed away for our move. I felt like I should wait until I could stage the food and take a beautiful photo of it like you see on those totally amazing foodie blogs.
But then I realized that this journey isn’t about being perfect, in fact if anything else it’s about admitting my own fallibility and saying “Life happens!” when things don’t really go as I would wish them to.
This blog series is about how I am making it work even amidst the craziness of my life right now and so what that means right now is that there aren’t going to be any fancy photos or perfectly displayed food. And that’s okay….cause the food still tastes awesome!
So here it is, my first breakfast of Berry Protein Breakfast Soup!
Now some of you that follow me on Facebook, may see the discrepancy between my photos and the recipe above. In his cookbook, Dr. Axe gives the recipe for one serving and advises that you eat it immediately after making it. In theory that would be awesome if I had that time every morning to do that, but this week especially I knew that I wouldn’t have the time to prepare and clean up from this every morning so I made a few tweaks and came up with a recipe to make and store this soup in bulk. If you’re like me and mornings are already hectic enough, I hope you’ll find this helpful!
Claire’s Version of Dr Axe’s Berry Protein Breakfast Soup
- 2 packages organic blueberries
- 1 package organic strawberries
- 1/2 cup lime juice
- 2 organic cucumbers ( I leave peel on for fiber content)
- 2 scoops hemp seed protein powder
Pour all ingredients into the blender and pulse until smooth. Pour soup into mason jars and seal tightly to keep air out. Refrigerate up to 5 days. On the morning you will enjoy your soup, warm one mason jar’s worth of soup on the stove top until just slightly above body temperature (around 100 degrees Fahrenheit)
I really enjoyed this soup, the bright flavor of the berries with the slight acidity of the lime all cooled off by the smooth cucumber made for a lovely start to my day!
